12 lasagna noodles
2 cups cooked chicken, shredded
1 ½ cups ricotta cheese
1 cup shredded mozzarella cheese (plus extra for topping)
½ cup grated Parmesan cheese
5 cloves garlic, minced (divided)
Zest and juice of 2 lemons (divided)
¼ cup fresh parsley, chopped (plus more for garnish)
1 teaspoon salt
½ teaspoon black pepper
4 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup chicken broth
1 ½ cups heavy cream
1 cup shredded mozzarella cheese (for topping)
Instructions
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish. Cook the lasagna noodles until al dente, drain, and lay flat to prevent sticking.
In a large bowl, combine shredded chicken, ricotta, mozzarella, Parmesan, 2 cloves garlic, lemon zest and juice, parsley, salt, and pepper. Mix until smooth and creamy.
Spread 3–4 tablespoons of filling onto each noodle, roll tightly, and place seam-side down in the baking dish.
In a saucepan, melt butter over medium heat. Add remaining garlic and cook briefly. Stir in flour, then slowly whisk in chicken broth and heavy cream. Simmer until slightly thickened. Remove from heat and mix in remaining lemon zest and juice. Season to taste.
Pour the sauce over the roll-ups and top with mozzarella cheese. Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until golden and bubbly.
